
Cookie Ice Cream Sandwhiches
Sweet chocolate chip cookies sandwich creamy ice cream in this dessert. Roll them in different toppings to make several different desserts. Use chopped nuts, sprinkles, or mini chocolate chips like we did here!

Ingredients
2 sticks butter, melted and cooled
1/4 cup granulated sugar
1 1/4 cups packed brown sugar
1 egg
1 egg yolk
2 tablespoons whole milk
1 1/2 teaspoons vanilla extract
2 1/4 cups bread flour
1 teaspoon baking soda
1 teaspoon salt
2 cup chocolate chips
Recipe Instructions
Mix melted butter and sugars until well mixed. Add in the egg and egg yolk and mix well. Mix in the milk and vanilla. Mix wet ingredients well. In a separate bowl, sift the flour, salt, and baking soda together. Gradually add into the wet ingredients until just mixed. Stir in the chocolate chips. Refrigerate dough for at least 1 hr. Preheat oven to 375 degrees. Scoop cookies onto your USA PAN® half sheet pan. Six cookies per pan. Cookies should be about the size of a golf ball. Bake for 11-15 min until just beginning to brown. Remove from oven to cool completely. Once cookies are cool, you can build your ice cream sandwich. Soften any flavor ice cream. Once softened enough to scoop, fill 2 cookies with ice cream and press together. Decorate with toppings of your choice (sprinkles, chocolate chips, crushed nuts). Once cookie sandwiches are assembled, wrap individually and store in freezer.
