
Vanilla Cupcakes

Ingredients
1 1/4 cups cake flour
1 1/4 teaspoons baking powder
1/2 teaspoons salt
2 large eggs
3/4 cup granulated sugar
1 1/2 teaspoons vanilla extract
1/2 cup vegetable oil
1/2 cup buttermilk
Recipe Instructions
Line USA cupcake/muffin pan with liners. This recipe makes 15 cupcakes. Preheat oven to 350 degrees. Whisk together dry ingredients- flour, baking powder, and salt- set aside. In a large mixing bowl (or bowl of stand mixer) beat eggs on medium high. Add in oil and vanilla. Slowly add flour and buttermilk, alternating each. Scrape bowl as needed. Batter will be thin. Fill each well about 1/2 way with batter. Bake for 12-14 minutes. Cool completely in pan and remove. Cool completely prior to icing with your favorite frosting recipe. ENJOY!!
